The proper name for this ingredient is Xanthan gum which is produced by the fermentation of maize starch (corn starch) with the bacteria Xanthomonas campestris.
During the fermentation process, the sugars in the corn starch are converted into long chain polysaccharides which have a gelling effect when added to water. Xanthan gum does not contain any mono-saccharides or di-saccharides (sugars) and has no adverse effects on the teeth.
